Can you test a saffron supplement at home?

You may already know the saffron water test. Drop a few threads into warm water, wait, and watch the color come out. Cooks have used it for generations to judge whether expensive threads are the real thing, and almost everything written about it assumes you're holding threads.

Far less has been written about the version that matters if your saffron came in a capsule. You can run essentially the same test. Open the capsule, stir the powder into a glass of water, wait a few minutes, and read the color. A strong yellow-orange means something. A pale, barely tinted glass means something else.

It sounds like folk wisdom in both forms. It isn't. The official international method for grading saffron does almost exactly the same thing, and the reason it works is worth understanding, because it also shows you precisely where the test stops working.

One difference between the two versions matters, and it comes up again further down. With threads you're partly reading how slowly the color releases, which is a property of intact plant tissue. Milled powder gives up its color almost at once, so with a capsule you're reading intensity rather than speed.

Does the water test actually work on a saffron supplement?

Yes, with one significant limit that almost nobody states. It's a rule-out test rather than a rule-in test, and knowing which of those you're holding changes what you should conclude from it.

The version of this test you'll find in most saffron guides is aimed at loose threads, and that version genuinely doesn't survive a capsule. Thread tests read how slowly the color comes out, because pigment locked inside intact plant tissue takes minutes to escape while a surface dye bleeds at once. Milling erases that difference. Ground powder gives up its color almost immediately no matter what it is.

The supplement version reads something different. Not the rate, the intensity. And intensity survives grinding perfectly well, which is why this test deserves more credit than the thread-test objection gives it.

How do you run it?

Keep the conditions the same every time, because the only thing you can really do at home is compare. A test run in a different glass with a different amount of water tells you nothing about the one you ran last week.

  1. Use a clear glass and a measured amount of room-temperature water, around 1 fluid ounce
  2. Open 1 capsule, or crush 1 tablet, and stir the contents in
  3. Wait 2 or 3 minutes and look at it against a white background in daylight
  4. Note whether the liquid is clear and colored, or cloudy and pale

Clarity matters as much as color. A true solution goes transparent and colored, like weak tea. A suspension of undissolved powder looks cloudy and murky, and that distinction turns out to be one of the more useful things the glass can show you.

Why does a glass of water tell you anything at all?

Saffron's color comes from crocins, and crocins are unusual. Most carotenoids are fat-soluble, which is why you cook tomatoes in oil rather than water. Crocin carries sugar groups that make it dissolve readily in water instead, and it makes up a substantial fraction of saffron by weight. Published figures range roughly from 6 to 16 percent of dry weight depending on cultivar, growing conditions and method of measurement.

ISO 3632-1:2011, the international specification for saffron, uses that property directly. Coloring strength is defined as the absorbance of a 1 percent aqueous solution at 440 nanometers, and the resulting number sorts saffron into Category I, II or III. A laboratory dissolves saffron in water and measures the color of the solution.

Your kitchen version differs in instrument rather than in principle. A spectrophotometer reads a defined concentration against a calibrated scale. Your eye reads an undefined concentration against a memory. That gap is the whole difference between a grade and an impression.

What does a pale glass mean?

This is where the test earns its place. Very little water-soluble colored material came out of that capsule, and for a product sold on its saffron content, that's a finding worth acting on.

It doesn't tell you why. The capsule may hold a small quantity of genuine extract heavily diluted with a filler. It may hold material that degraded on a warm shelf. It may hold something that was never strongly colored to begin with. The glass can't separate those, and it doesn't need to, because the practical response to all 3 is the same.

ConsumerLab bought and tested 6 saffron supplements in February 2023. 2 of the 6 came up short on saffron's marker compounds, and 1 of those showed signs of adulteration. It's a small sample and it isn't the whole market. It's enough to establish that a capsule failing this test is not a hypothetical worry.

Where does the test stop working?

At the other end, and the failure is specific. A strong orange glass proves a water-soluble orange pigment is present in quantity. It does not prove that pigment is crocin.

Safflower, the classic saffron substitute, contains water-soluble yellow pigments that dissolve and color a glass convincingly. Several permitted synthetic food dyes are highly water-soluble, cheap and vividly orange-yellow. Any of them would pass a color check comfortably, and no amount of squinting separates them from crocin by eye.

Turmeric is the interesting exception, and it works in the test's favor. Curcumin is notoriously poorly soluble in water, so turmeric tends to sit as a cloudy suspension rather than dissolving into a clear colored liquid. If your glass is murky rather than transparent, that's worth noticing.

There's a second limit, quieter than the first. Even a genuine result isn't a measurement. Without a fixed concentration and a reference to compare against, intensity by eye can't be converted into milligrams of anything. It's a signal about presence, not a number about strength.

How much crocin do the studies actually use?

Two separate bodies of research get quoted in this category, and they use doses that differ by roughly 5 to 10 times. Confusing them is the single most common way a perfectly reasonable product ends up looking wrong.

Both literatures are real. Randomized trials of purified crocin at 15 and 30mg per day have run in several settings since 2019, and the saffron-extract mood trials that built this category's reputation used roughly 28 to 30mg of extract.

The trap is treating one as the benchmark for the other. Measured against a purified-crocin dose, every whole-extract product on the market looks underdosed, including the ones used in the trials people cite when they recommend saffron in the first place. Measured the other way, a crocin product looks implausibly large.

The honest position is that these are different interventions studied for different outcomes, and a product should be compared against the trials that match what it actually contains. That's a duller answer than a single number, and it's the one the evidence supports.

What closes the gap the glass leaves open?

An identity test, and this is the part worth taking away from the whole article. The 2 checks answer opposite questions, and the weakness of each is the strength of the other.

FTIR spectroscopy passes infrared light through a sample. The molecules absorb characteristic wavelengths and produce a pattern, and that pattern is compared against a reference for the species it's meant to be. It works on powder, which is the property that matters here. Foschi and colleagues at the University of L'Aquila ran 334 samples through ATR-FTIR in December 2022 and separated genuine fresh saffron from saffron padded with old stigmas with complete accuracy in external prediction.

What FTIR won't tell you is quantity. It reports that the material matches the reference, not how much of it is in your capsule or how strongly colored it is.

Run in sequence they're considerably stronger than either alone. The certificate establishes that the material in that batch is genuine Crocus sativus. Your glass establishes that the capsule in your hand released a meaningful quantity of water-soluble color. One is identity you can't determine at a kitchen sink, the other is a check on your own bottle that no certificate can perform for you.

The 2-step check, for any brand

Deliberately brand-neutral. Run it against anything on the shelf, ours included.

  1. Find the lot number printed on the bottle and ask the brand for the certificate covering that specific lot
  2. Check whether an identity test appears on it, and which method was used. Heavy metals and microbiology are safety tests and establish nothing about what the material is
  3. Confirm the lot on the certificate matches the lot on your bottle, and that an independent laboratory ran it
  4. Then open a capsule and run the water test yourself
  5. Read the 2 results together. A matched identity certificate plus a strong clear color is about as far as a buyer can reasonably get

Step 1 does most of the work, and it's the step most brands can't complete. A company that hands you the certificate for your own lot quickly has already answered several of the questions further down the list.

And the thing we can't tell you. We don't publish a crocin percentage for Saffron360, because our certificate doesn't carry one. It's an identity and purity document. It confirms the material is saffron and clean, and it doesn't grade coloring strength. Anyone quoting you a crocin figure should be able to show you the report it came from.

Frequently asked questions

Does the saffron water test actually work?

Yes, within limits. Crocin is water-soluble, and ISO 3632 grades saffron by measuring the absorbance of a 1 percent water solution at 440 nanometers, so a color check is a rough version of the reference method. It reliably identifies a capsule that releases very little colored material. It can't confirm the color came from saffron rather than another water-soluble dye.

How do I test my saffron supplement at home?

Open 1 capsule into roughly 1 ounce of room-temperature water in a clear glass, stir, wait 2 or 3 minutes, and look at it against white in daylight. A clear, strongly colored yellow to orange liquid is a good sign. A pale or barely tinted glass suggests very little water-soluble crocin. Keep the water volume and timing the same each time, since comparison is the only thing this test really offers.

My glass turned cloudy instead of clear. What does that mean?

Cloudiness suggests material that isn't dissolving. Crocin forms a true solution and goes transparent, so a murky glass points at suspended powder. Turmeric behaves this way, because curcumin is poorly soluble in water. Some cloudiness from capsule fillers is normal, but a glass that stays opaque rather than clearing is worth noting.

Can the water test tell me how many milligrams I'm getting?

No. Converting color into a quantity requires a fixed concentration and a calibrated reference, which is the difference between a spectrophotometer and an eye. The test tells you a colored compound is present in meaningful quantity. It doesn't measure strength.

What could pass the water test without being saffron?

Safflower contains water-soluble yellow pigments that dissolve convincingly, and several permitted synthetic food dyes are highly water-soluble and vividly orange-yellow. Any of those would produce a strong colored glass. This is why a color check needs a laboratory identity test alongside it rather than instead of one.

What is FTIR identity testing?

FTIR is Fourier transform infrared spectroscopy. Infrared light passes through a sample, the molecules absorb characteristic wavelengths, and the resulting pattern is compared against a reference spectrum for the species. A match confirms the material has the characteristics of the standard. It works on milled powder and reports presence rather than quantity.

Is ISO 3632 the same as an identity test?

No, and the distinction is easy to miss. ISO 3632 grades saffron into Category I, II or III by measuring crocin for color, picrocrocin for taste and safranal for aroma. It assumes the sample is saffron and asks how strong it is. An identity test asks the prior question of whether it's saffron at all. A thorough answer wants both.

How much crocin did the clinical trials use?
